Easy Fix:Butter-seared specklebelly Goose or sandhill steak

If you've never cooked specklebelly goose or sandhill crane this way, you're missing out.  Quick, simple, and packed with flavor, either bird can rival (and often outperform) your favorite steak.

ingredients

  • Specklebelly goose breasts or sandhill crane breasts
  • Favorite steak seasoning
  • Butter
  • Minced garlic
  • Cooking Oil

instructions

1.  Prepare the Meat

Thaw your specklebelly goose or sandhill crane breasts completely and allow them to come to room temperature.

2.  Preheat the Grill or Oven to 400°F

3.  Season the Breasts

Season both sides of the breasts generously with your favorite steak seasoning.  Add a light sprinkle of minced garlic to each side.

4.  Heat the Cast Iron

Add a small amount of cooking oil to a large cast iron skillet and heat until the skillet is searing hot.

5.  Sear the Meat

Add a slice of butter to the skillet and allow it to melt.

Place one or two breasts into the skillet at a time, being careful not to overcrowd the pan.  Sear for approximately 1 minute and 45 seconds per side to develop a flavorful crust.

6.  Finish Cooking

Transfer the seared breasts to the preheated grill or oven.

Cook for approximately 8-10 minutes, or until the internal temperature reaches 135°F.

7.  Rest the Meat

Remove the breasts from the heat and allow them to rest for 5 minutes.  This helps retain moisture and ensures a tender bite.

8.  Slice and Serve

Slice against the grain and serve immediately.

Pro Tip: Don't overcook these birds.  Specklebelly goose and sandhill crane are the best enjoyed medium-rare to medium.  Cooking beyond that can result in a tougher texture and less flavor.
