FRIED DOVE NUGGETS
A LIMIT OF DOVES. A HOT PAN. A FEW COLD ONES.
Dove season doesn't need a complicated recipe.
Cut those breasts into bite sized nuggets, give 'em a few hours in pickle juice, throw on a simple seasoned batter, and drop them in hot oil. Crispy on the outside. Tender on the inside. Gone before the next round hits the table.

Prep Time: 15 Minutes (plus 2-4 hours soaking)
Cook Time: 10-15 Minutes
ingredients
- 12-16 dove breasts, cut into bite-sized nuggets
- Pickle Juice, enough to completely cover the dove
- 1 cup all-purpose flour
- 1/2 cup cornmeal or bread crumbs
- 1 1/2 tbsp Creole seasoning
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 tsp onion powder
- Oil, for frying

Soak the Dove
- Place the dove nuggets in a bowl or resealable bag and pour in enough pickle juice to completely cover the meat.
- Refrigerate and let them soak for 2-4 hours
- When you're ready to fry, remove the dove from the pickle juice and let the excess drain off. No need to rinse them.






Make the Batter
Now get out a couple bowls, heat up the fryer or your favorite cast-iron skillet, and get ready to make some magic. This one doesn't require much patience.....which is probably good, because everyone is going to be standing around waiting for it.
- Combine the flour, cornmeal, Creole seasoning, garlic powder, black pepper, paprika and onion powder in a bowl.
- Mix everything together until the seasoning is evenly distributed.
- Toss the pickle-soaked dove nuggets into the seasoned flour mixture.
- Press the batter onto the meat so you get a good coating on every piece.
Fry the Dove
- Heat enough oil to completely surround the nuggets to 350°F.
- Carefully place the battered dove into the hot oil. Don't overcrowd the pan or fryer, give those nuggets some room.
- Fry for approximately 2-3 minutes, turning once if needed, until the coating is golden brown and crispy.
- Dove i lean and cooks quickly, so don't overcook it. You want that crispy outside with tnder, juicy meat inside.
- Remove the nuggets and place them on a paper towel-lined plate or wire rack to drain.
Serve it Up
This is where things get dangerous because it's pretty eaqsy to eat these straight off the plate before everyone else gets a chance.
Serve the dove nuggets hot with ranch, honey mustard, spicy mayo, or whatever dipping sauce you like. For a little extra kick, sprinkle the finished nuggets with a pinch of Creole seasoning while they're still hot.
Cold drinks, hot dove nuggets and a table full of hungry hunters. That a pretty good way to end a dove hunt.
